Risotto Dolce is an Italian gluten-free dessert, the equivalent of Riz au Lait in France or Rice Pudding in anglo-saxon countries. I used Tefal Cuisine Companion for this recipe and it worked very well. You can use any thermo-appliance or alternatively you can make it using a stove top but it will involve quite a fair bit of stirring (think Risotto!).
- 1 litre milk
- 150 g arborio rice
- 100 g sugar
- 1 tsp vanilla extract
- Place milk, sugar and vanilla in the bowl (using the mixer). Set to Speed 3, for 8 minutes at 90°C.
- Add the rice and cook for 32 min using the same settings, with the stopper on.
- The texture will appear little running at the end of the program, not to worry. Place the mixture into ramequins and cool in the fridge. Serve cold.
