Salad is my friend – it’s easy and fast to make, it doesn’t involve much washing-up and best of all it’s healthy!
Today, I’ll show you that preparing refreshing and delicious salads doesn’t have to be at odds with traditional flavours and favourite combinations. This simple, but very tasty salad is a favourite in my home – I love the tanginess of blue cheese in salad! This pear walnuts and Gorgonzola salad is also perfect for packing and taking to work.
Ready in less than 10 minutes, you can also create your own variation by replacing walnuts with pecans. Gorgonzola can be swapped for Roquefort. Use rocket instead of mixed leaves, or add a teaspoon of chia seeds for a nutritional boost!
PEAR WALNUTS AND GORGONZOLA SALAD
Ingredients
- 1 cup of mixed salad leaves
- Half a pear
- 2 tbsp walnuts
- 2 tbsp Gorgonzola (diced or crumbled)
- Balsamic vinegar, olive oil (to serve)
Method
- Combine all ingredients
- Drizzle vinegar and oil on top just before serving.
